Blueberry Muffin

  • Butter (110g)
  • Sugar (200g)
  • Milk (125ml)
  • Flour (250g)
  • Baking Powder (2tsp)
  • Egg (2)
  • Salt (1/2tsp)
  • Bluberries

METHOD

  • Cream butter and sugar till fluffy, add in the eggs one at a time, add in the milk.
  • Gradually add in the sifted dry ingredients.
  • Line your muffin tin with paper cases, divide the batter into the twelve cases.
  • Wash the blueberries and coat them in flour (it prevents them from sinking in the bottom)add about five to six blueberries in each case, gently press down down.
  • Bake in a preheated oven at 180c for 20minutes or till a toothpick inserted comes out clean.
  • Enjoy.
